About Mark

Welcome to Dish Cookery School. 

I absolutely love ingredients and believe in keeping food local — from plough to plate, trawler to table, field and ocean to kitchen. I aim to tell the story behind every ingredient to help you: see the source, understand the food chain, forage in nature and connect with what we eat.

 

As one of the longest-serving cookery school chefs in Cornwall, and with a career in hospitality that began at the age of 13, I’ve spent decades perfecting my craft.  I believe great food doesn’t have to be complicated. I create punchy dishes that push boundaries where every ingredient is there for a reason, nothing is superfluous.  I have taught in cookery schools across the country for xx years and have a real passion for sharing my knowledge, helping everyone to eat better, cook smarter and enjoy great food at home.

 

It’s all about immersing yourself in great food that stimulates all the senses and elevates the everyday. Think cheese on toast — but not as you know it!
